Local farmers disappointed, frustrated as USDA stops funding for produce in schools

HUNTINGTON, W.Va. — Alex Spaulding, a Spring Valley High School graduate, said he saw there were issues in the region caused by chronic disease, and wanted to find a way to help prevent it.

In 2019, he took a master class and began selling homegrown microgreens to a chef in Louisville, Kentucky. Now, he owns and operates Elevated Greens, a hydroponic farm that can grow anywhere from two to four tons of greens annually using a watering system.

“This is my passion. This is what I’m going to make happen for this whole region,” he said.

Alex Spaulding sells to Mardi Gras Casino and Resort in Cross Lanes, and local customers like 21 at the Frederick and The Wild Ramp in Huntington. But a significant portion of his sales, almost 50%, go through Cabell County Schools. He sells lettuce to the school district just about every week.
